Rosemary Potato Trees

Such a great side dish, appetizer or even as a snack that is vegan, plant based, gluten free and delicious!!


-3 to 8 Large Potatoes (depending on the amount of people) I used white and purple potatoes
-Rosemary stalks
-Olive Oil


  1. Slice the potato into thin slices (aim for 0.5cm thickness)
  2. Place into a bowl, drizzle a little olive oil and shake until all are covered evenly
  3. Line a baking tray and place the potatoes onto the tray (make sure they have space)
  4. Place in the oven eat 200C / 390 F for 20 minutes
  5. Turn them and place them back in the oven for 10 minutes
  6. Finally push through onto the rosemary stalks and serve with a sprinkle of salt and your favorite sauce!
